Canadian Thanksgiving in Ajijic, Lake Chapala
Happy Canadian Thanksgiving to all our Canadian friends and family.
This year we had our Thanksgiving Dinner at home here in Ajijic with our family of two daughters and their husbands and our, now, three grandchildren. We missed our son and his wife who are still in Toronto but were very happy to have our girls and their families here.
The cooking was a family affair with me cooking the turkey, making the stock for the gravy, making the gravy, the homemade cranberry sauce, the butternut squash casserole and Bobby Flay’s Heartland Chopped salad of kale, spinach, wild rice, dried cranberries, toasted walnuts and Asian pears with a Pomegranate Molasses dressing. My husband made the delicious stuffing, the white wine Sangria, and my son-in-law made the mashed potatoes with leeks poached in butter and his mother’s Carrot Cake.
The face that my husband and I actually cooked in the kitchen at the same time without bloodshed was certainly worth giving thanks.
I would also like to mention that the Premium Young Turkey from some farm that I purchased from Purtian Poultry was the best turkey we have enjoyed in Ajijic, Lake Chapala. You can call Joe at Puritan Poultry (376) 765-4399 to get the actual name of the farm.
The other highly interesting, to me, fact was that I was able to purchase Pomegranate Molasses at our very own Superlake in San Antonio Tlayacapan for the Heartland Chopped Salad.
We were very pleased with the day and our grandson and two baby grandaughters were wonderful.
One of our daughters and her family stayed for the Clinton/Trump Presidential debate and my husand was thrilled to pieces that the Toronto Blue Jays swept the Texas Rangers in 3 games to head to the American League Championship Series.
All in all a very successful and happy Canadian Thanksgiving. We have so very much for which to be grateful not the least of which are our three grandchildren. A 5 year old boy, his baby sister who is now 5 weeks old and their baby girl cousin who is 5 months old.
I said to my husband “Did you think we would ever have grandchildren?” and he replied “Yes, but I did not think they would come in bunches.”
