Sunday Lovely Sunday in Ajijic, Lake Chapala
Yesterday was a lovely day. It was Valentine’s Day which is always a pleasant day and we were having a belated birthday dinner for one of our daughters.
I love Sundays anyway. My husband works 6 days a week and on Sundays he loves to cook which relaxes him. He makes us a beautiful breakfast and also cooks dinner which relaxes me too.
Our daughter’s favorite dinner is curry so we decided to make a beef curry with stuffed mushrooms as an appetizer and as her favorite cake is chocolate, we had a chocolate cake with ice cream.
We also invited friends of ours from Prince Edward Island who were here for their annual visit to Ajijic, Lake Chapala to get out of the chill of winter in Canada.
This is the third year we have spent Valentine’s Day together and we saw no reason to break tradition.
Our friends got along very well with everyone and there was a great deal of laughing. The stuffed crimini mushrooms were delicious and the beef curry with roasted peanuts and Major Grey Chutney on basmati rice was also superb. My husband did not wish to make the curry too hot so he made a sauce on the side from jalepenos and various hot sauces our master chef son-in-law had left for us. That too was a huge success.
We enjoyed the day very much and so did our daughter and her family.
As we live in paradise here in Ajijic, Lake Chapala, we ate outside which further enhanced our enjoyment of the day.
After our company left and the kitchen was clean we capped off a lovely day by watching Downton Abbey.
That, of course, was bittersweet as there are only 3 episodes left and it will leave a gaping hole in our television watching regime.
